MARY TUCKER’S WINNING ENTRY – ITALIAN LOVE CAKE – November 2006

9″ x 13″ baking pan, greased
350º oven, preheated
1 box marble cake mix
(ingredients for cake mix not listed below)
2 lbs. ricotta cheese
1 cup sugar
3 large eggs
2 tsp. vanilla
1 cup milk
1 box instant chocolate pudding
1 8 oz. tub Cool Whip

Follow directions for cake mix.

Pour batter into greased pan.

Beat eggs, mix with ricotta cheese, sugar, and vanilla.

Pour on top of cake mix batter.

Bake at 350º for 60 to 75 minutes

Let cool.
Frosting:  mix milk and pudding until completely blended, then fold in Cool Whip. Spread on cooled cake, refrigerate until served.
