This favorite recipe was given to me by Sylvia Pafenyk and I think of her lovingly every time I make it:
Cranberry Pie Cake
2 cups cranberries
1 1/2 cups sugar (I use 1 1/4)
1/2 cup chopped walnuts, chopped
1/2 cup butter or margerine, melted
1/4 cup sour cream (or yogurt)
1 cup unsifted flour
Grease 10″ springform pan.
Sprinkle berries, 1/2 cup of the sugar, and the walnuts over the bottom ( in that order).
Beat eggs until yolks and whites are thoroughly combined.
Add remaining sugar, butter, sour cream and flour.
Beat just until dry ingredients are moistened.
Pour over berry mixture.
Bake in preheated 325 degree oven until brown on top….. about 1 hour.
Makes 8 servings.
This easy and delicious recipe is even more wonderful served with whipped cream or vanilla ice cream!
